Chocolate biscuits on a stick
Preparation time: 30 minutes plus 1 hour cooling
Difficulty: Middle

Ingredients for the biscuits:

100 g butter
·
80 g corn sugar
·
2 egg yolks
·
¼ tsp ground cinnamon
·
Pinch of salt
·
200 g spelt flour
·
1/8 tsp baking powder
·
30 g cocoa powder
Ingredients for the chocolate filling:
·
150 g dark chocolate (low fructose)
·
40 ml double cream
Also: 20 Cake pop sticks or lolly pop sticks
Directions:

Cream the butter and sugar together

Add the egg yolks, cinnamon and salt and beat further

Sieve the flour, baking powder and cocoa powder together and add to the mixture

Carefully mix to a dough. If the dough is too sticky, add a bit more flour

Knead shortly with your hand and wrap the dough in clingfilm

Put the dough in the fridge for approx 1 hour

Pre-heat the oven to 180 degrees and put greaseproof paper on a baking tray

Roll the dough out between 2 pieces of greaseproof paper, until it is 4 cm thick

With a biscuit cutter of your choice, cut out biscuits and place on the prepared baking tray

If you wish, you can use a biscuit stamp to personify your biscuits

Bake the biscuits for approx. 12 minutes in the oven

Remove and leave to cool

In the meantime, make the chocolate filling

Melt the chocolate with the cream in a water bath. Keep stirring and make sure the mixture doesn´t get too hot

Let the chocolate mixture cool down and then fill in a piping bag with nozzle

Pipe the chocolate mixture on the inside of half the biscuits

Add a wooden stick in the middle and carefully position another biscuit on top
-
Press lightly together

Leave the biscuits in the fridge to harden
