Ginger Biscuits
For approx 20 biscuits:
150 g butter (lactose free if necessary)
50 g powered dextrose
70 g corn sugar
Tbsp ground ginger
150 g rice syrup
½ tsp cinnamon
½ tsp bicarbonate soda
1 Tbsp boiling water
350 g spelt flour
-
Pre-heat the oven to 180 degrees
-
Put the butter, dextrose, corn sugar, rice syrup, cinnamon and ginger in a pan and melt slowly on
low heat
-
Remove the pan from the heat, before the mixture
boils and let it cool down to room temperature
-
Dissolve the bicarbonate soda in the boiling water
and add to the butte mixture. It may foam ;)
-
Add the flour and mix thoroughly
- Line a baking tray with greaseproof paper
- With the help of two spoons, divide the dough mixture onto the baking tray. Remember they will spread a little the oven, so leave room between them
- Bake in the oven for approx. 15 minutes until golden brown
- Take out of the oven and leave to cool before eating...enjoy!! :)
