Shortbread
For approx 40 biscuits
Ingredients:

360 g spelt flour

160 g corn sugar
-
15 g vanilla sugar
-
50 g rice flour
-
230 g butter (lactose free)
Directions:

Mix all the ingredients together to a dough

Wrap the dough in clingfilm and put in the fridge for approx 30 minutes

Roll the dough out between 2 pieces of clingfilm until the dough is approx 7 mm thick

Cool the dough for another 30 minutes

Pre-heat the oven to 180 degrees

Now cut the dough into the shape wished. Make holes on the dough with a toothpick

Place the biscuits on a baking tray covered with grease proof paper and bake for 12 - 15 minutes

Leave to cool on the tray...enjoy!! :)
