Gingerbread cake
Ingredients:

100 g butter (Lactose free butter)

100 g corn sugar

100 g spelt flour

2 eggs
-
1 tsp baking powder

2 tsp mixed spices
Gingerbread man tin/form or small paper cases

Preheat the oven to 180*C.

Beat the butter and sugar until creamy

Add the eggs, one at a time and carry on beating
- Mix the baking powder and mixed spices with the flour and add to the mixture. Beat well

Grease the tin or place paper cases on a try

Pour the mixture in the tin and bake for approx. 20 minutes in the oven
- Take out of the oven and leave to cool.
