Party Muffins
Prep time: 50 minutes
Baking time: ca. 15 minutes

Yield: 12 Muffins
Ingredients
for the batter:

200 g spelt flour

2 tsp baking powder
-
125 g soft butter or margarine (lactose free if necessary)

140 g corn sugar
-
2 eggs
-
2 tbsp low fructose black currant
syrup
-
2 tbsp cocoa powder
-
1 tbsp milk (lactose free if necessary)
Ingredients
for decorating:

200 g double cream (lactose free if necessary)
-
250 g quark/fromage blanc (lactose free if necessary)
-
zest from ½ a lemon
-
25 g corn sugar
-
Vanilla flavouring
-
Food colouring
Directions:
-
Preheat the oven to 180 degrees

Beat the butter and sugar together until creamy
-
Beat in the 2 eggs until thoroughly mixed
-
Sieve the flour and baking powder into the egg mixture
-
Beat until smooth
-
Divide the mixture into 3 portions
-
Add the Black currant syrup to one portion and mix well
-
Add the chocolate drink and the tbsp of milk to another portion and mix well
-
Line a muffin tray with paper or silicon cases
-
Place a spoonful of each batter in the cases, to make colourful cakes

Bake for approx. 15 minutes in the oven

Take out of the oven and leave to cool
-
In the meantime, make the decoration “streamer” creams
-
Whip the double cream until stiff
-
Add the sugar, vanilla flavouring and lemon zest, fold in gently
-
Slowly add the quark and fold in carefully
-
Divide the cream depending how many different colours are needed
-
Colour each cream according to the instructions on the packing
-
Place each coloured cream in a plastic freezer bag and cut the end off, not too
much
-
Decorate the muffins with the “streamer” creams
-
