Banana bread
Difficulty: Easy
Ingredients:

300 g gluten free flour

10 g baking powder

1 tsp cinnamon

½ tsp nutmeg

100 g corn sugar

2 bananas (approx. 200 g)

2 eggs
-
130 ml plant-based drink or milk

50 g butter (melted)
-
50 g dark chocolate (low fructose)
Directions:

Pre-heat the oven to 180 degrees

Grease a loaf tin

Mix the flour, baking powder and spices

Add the sugar

Mash the bananas in a bowl with a fork

Add the milk, eggs and melted butter. Mix well
-
Gradually add the flour to the banana mix and fold in well
- Pour the batter into the greased tin and bake for approx. 45 minutes in the oven until a skewer comes out clean

Remove from the oven, leave to cool slightly in the tin, then remove from the tin
and leave to cool on a wire rack
